Tex Mex Deviled Eggs

Tex-Mex Deviled Eggs

12 hard boiled eggs – peeled
2 tablespoon diced green onion
2 tablespoon chopped fresh cilantro
2 small serrano or jalapeno pepper, seeded and finely chopped
1/2 cup mayonnaise
1 teaspoon mustard
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup shredded cheddar cheese
Chili powder


1. Cut peeled eggs in half length wise and place yolks in a mixing bowl, set the whites aside. Mash the yolks with the back of a fork and add green onion, cilantro, serrano or jalepeno peppers, mayo, mustard, salt, and pepper. Mix well.

2. Spoon or pipe the filling back into egg white and sprinkle tops with cheese and chili powder.

3. Cover and refrigerate at least one hour before serving.
