Shrimp Radish Deviled Eggs

12 hard boiled eggs – peeled
1 tablespoon olive oil
2/3 pound medium sized de-veined shrimp
1/2 cup mayo
1/3 cup finely minced radishes
3 stalks finely minced green onion
1 finely minced garlic clove
salt and pepper to taste

1. Cut peeled eggs in half length wise and place yolks in a mixing bowl, set the whites aside.

2. Add olive oil and shrimp to a skillet and cook over med-high heat for 3 minutes or until shrimp are done. Transfer shrimp to cutting board and let them cook a little. Slice shrimp in half (long ways). Put 24 shrimp halves aside and finely chop the remaining shrimp.

3. Mash the yolks with the back of a fork and add mayo, chopped shrimp, radishes, green onion and garlic. Mix well and salt and pepper to taste.

4. Spoon or pipe the filling back into egg white. Top each deviled egg with a shrimp half.

5. Cover and refrigerate at least one hour before serving.
