Buffalo Deviled Eggs
Everyone loves Buffalo Wings, now you can have Deviled Eggs with that great Buffalo taste!
12 hard boiled eggs – peeled
1/2 cup blue cheese – crumbled
1/2 cup mayonnaise
3 teaspoons dried parsley
2 celery stalks – finely minced
1 teaspoon Tabasco sauce
Salt & Pepper – to taste
paprika (optional)
Directions:
1. Cut peeled eggs in half length wise and place yolks in a mixing bowl, set the whites aside. Mash the yolks with the back of a fork and add blue cheese, mayonnaise, parsley, celery, and Tabasco. Mix well and salt and pepper to your liking.
2. Spoon or pipe the filling back into egg white.
3. Cover and refrigerate at least one hour before serving.

Shenanigans on this one, the base pepper for anything “buffalo” shouldn’t be tabasco pepper, that’s not the flavor of buffalo. It should something cayenne pepper based, such as Frank’s Hot Sauce.

I always use Tabasco for anything “buffalo”. Maybe it’s a regional thing?
I actually make some similar deviled eggs except with a couple substitutions. Green onion for the parsley, sour cream instead of mayo, Franks instead of Tabasco and then I make a seasoning mix with salt, pepper and powdered ranch to top it. With the ranch topping you can make the blue cheese optional.
